Today we’re going to make a 3 Ingredient Dairy Free Coffee Ice Cream

The goal is less fat, easier to digest, and less food sensitivities.

Our 3 ingredients are

  • Double Shot of Espresso
  • 1 can on Coconut Milk
  • Agave

Freeze for 15 hours and spin using the Creami Ninja.

Today we’re going to use the Ninja CREAMi to make Chocolate Ice Cream comparing Organic Cocoa Powder vs Dark Chocolate Baking Gems.

  • Coconut Cream
  • Agave
  • Organic Cocoa Powder vs Dark Chocolate Baking Gems

Freeze for 24 hours and spin 2X using the Ninja CREAMi adding Agave with each spin.

Ninja Creami Almond vs Soy

We had a request to use the Ninja CREAMi to make a Coffee dessert comparing Almond vs Soy Milk.

The goal is less fat, easier to digest, and less food sensitivities.

Our 2 Ingredients are the following:

  • Double shot of espresso
  • Almond or Soy Milk

Freeze for 24 hours and spin 2X using the Ninja CREAMi adding either Almond or Soy Milk with each spin.

4th of July Potato Salad

Get Ready With Me for 4th of July, Poblano Pepper and Garlic Potato Salad

  • 4 Poblano Peppers
  • 3 lbs of Russet Potatoes
  • 12 Cloves of Garlic
  • 1/2 Lemon Juiced
  • 5 Dollops of Mayonnaise

For extra spice add in red onion and a Jalapeño.

With our current fast paced lifestyle, we have gotten away from our Generational Roots way of cooking.

Our Grandparents historically balanced acidic foods with alkaline vegetables and fruits naturally creating an Alkaline Diet.

The benefit of having an Alkaline Diet is to have more cell energy to last the day and to repair.

In this video, I briefly explain the Alkaline Benefits and get ready for 4th of July with a tasty and easy to make spicy potato salad.

Poblano Peppers and Potatoes are Alkaline foods that balance out the eggs in the Mayonnaise.
If you are allergic to egg white or yolk you can substitute Duck eggs and make your own Mayonnaise which be Lowest Alkaline.

Grilled Peaches

The grilling of the Michigan Peaches intensifies the flavors of the Coconut Milk, Honey, and Vanilla

Plus it’s fun to grill Peaches and watch them sizzle on the grill.

Served with Tapioca or Coconut Vanilla Ice Cream this dessert is a favorite.

Tapioca:

Combine 1/3 cup of White Grape Juice with 1 Tablespoon of Tapioca.
Bring to a simmer for 5 minutes or until thick.
Combine with a 1/2 cup of Coconut Milk and serve with Peaches.

Peaches are Alkaline. The more Alkaline foods you eat, the better you feel and the more energy your body can produce.

Peach Marinade:

  • Coconut Milk – 1/2 cup
  • Honey – 1 Tablespoon
  • Vanilla – 1 Tablespoon
  • Virgin Olive Oil – 2 Tablespoons
  • White Grape Juice – 1/2 cup
  • Thyme – 12 sprigs

Sawyer Garden Center in Michigan is a happy place of colors, smells, and sounds. They have an amazing variety of peppers, vegetables, and fruits.

The honey is very good and local from Coslet Bee Farm in Winfield, Indiana.

Savory Zucchini Tian with Eggs and Goat Cheese

The inspiration for this video came from the April 13th 2024 edition of The Wall Street Journal.

The article was called “Why Americans Crave Southern French Cooking Now?” By Alexander Lobrano.

Rosa Jackson is a Canadian who moved to the south of France and wrote a cook book called Nicoise.

I like this because it is a high energy dish that is easy to digest and is high in vitamins/minerals adding to the ability to create energy making this an energy gain and not an energy drain.

I liked the idea of using zucchinis as we see them in the grocery store and if you’re like me – a better tasting recipe to use more of them sounds fun.

My goal was to make this without cow dairy so we are skipping the cream/butter and substituting with coconut milk.

  • 2 pounds of zucchini, green and yellow
  • Avocado or Olive Oil
  • 1 small clove of garlic
  • 4 large eggs – recipe calls for 6 but I am using Duck Eggs for people with food sensitivities to chicken eggs
  • 1/4 cup of fresh basil or dried
  • 3 ounces of Goat Cheese
  1. Preheat oven to 350 degrees
  2. Bake for 30 minutes and serve at room temperature, lightly puffed
